How to make Smoke Eggplant (Bademjan Doody)
Ingredients
  • 2 big round eggplants
Directions
  • Wash eggplants.
  • Place an oven rack on top of the stove and place the eggplants on top.
  • Smoke the eggplants for few minutes, turning every minute using tongs.
  • When smoked, turn off the heat and leave to cool.
  • Then remove skin.
  • You can use a barbecue to smoke eggplants.
  • Now use it according to the recipe in hand.
Tips

You can keep smoked eggplant (bademjan doody) in the freezer in an airtight container or an ice tray, and use it when you need.

Always record the date on the container of the food you keep the in freezer.
