Beans & dill stew (Baghla Ghatogh )

2 servings

  • 1 cup kidney beans, lima beans and haricot beans
  • 1/4cup dried dill tips
  • 2 eggs
  • 4 tablespoons oil
  • 3 garlic cloves
  • 1 teaspoon salt
  • 1 teaspoon turmeric
  • 2 cups water 
  • Soak beans overnight (refer to the related video)
  • Skin beans.
  • Heat oil in a frying pan, add garlic and fry for 1 minute.
  • Add beans and fry for 2 minutes.
  • Add turmeric, dill tips and mix.
  • Add water. Enough to cover the beans.
  • Add salt Bring to boil, reduce heat, cover and let simmer for 10 to 15 minutes or until the beans are cooked.
  • Then break eggs one by one on top of the beans.
  • Cover and cook till eggs are set (5 minutes).
  • Serve this food with rice or bread.
  • Now enjoy (Nooshe jan). 

Don’t overcook the beans, as they’ll lose their shape and go mushy.

you can use haricot beans or white beans as well for this recepie and you don't need to skin it, just cook and drain then use.
