Ingredients

4 servings

  • 2 cups basmati rice
  • 5-6 glasses of water
  • 3 tablespoons salt
  • 2 tablespoons oil 
  • 1 Teaspoon liquid saffron (how to make ligid saffron). 
Directions
  • Wash rice in a pot, drain then add 5 cups water, now put it on top of the stove and bring to boil.
  • Add salt and boil till rice is tender (rice should remain hard in the middle), then drain.
  • In a pot add 1/4 cup water, oil and 1 teaspoon liquid saffron.
  • Arrange rice on top and bring contents to center of pot.
  • Make a few holes on the rice pile, then cover and let rice steam.
  • Cover lid with a kitchen towel, place on pot and cook rice for 30 minutes on low heat.
  • Gently mix a few spoons of rice with 2 teaspoons of liquid saffron to make saffron topping (how to make saffron topping).
  • Arrange rice in a serving dish or plate, top with saffron mixture
  • we serve this rice with stews and kebabs (kababs).

Tips

If you want to get a good tahdig you have to cook rice longer, but use a low heat.

Always taste the food at the end and adjust the salt and spices to your taste.

You can freeze this rice for later use.

Always record the date on the container of food when storing in the fridge or freezer.
