Directions
  • Make Dolmeh stuffing (refer to the related video) 
  •  To make the sauce, in a pot, add oil, fried onion, tomato paste and fry for 2 minutes.
  • Add salt, pepper, lemon juice, cinnamon, water and bring to boil.
  • Wash eggplants, cut the top and empty the flesh leaving a centimeter of flesh around the skin. Be careful not to break the eggplants. 
  • Fill the eggplants with some stuffing but don't over load as the stuffing will expand when cooked.
  • Arrange eggplants standing up, in a pot or deep frying pan.
  • Now add Dolmeh sauce and bring to boil. Cover and let simmer until cooked.
  • You need to cook the dolmeh for at least 1 hour.
  • Now nooshe jan (enjoy). 
Tips

Don't overcook the dolmeh as they will lose their shape.
