How to make Fried spinach (Esfenadje sorkh kardeh)
Ingredients

makes 1-2 cups

  • 1 kg fresh spinach
  • 1/3 cup oil
Directions
  • Clean and wash spinach twice.
  • To dry the herbs, place them into a clean cloth bag, close the top, place in the washing machine and spin a few times.
  • Now chop the herbs.
  • Place chopped herbs in a pot, add oil and fry for 10 to 20 minutes depending on the amount of herbs.
  • Now use the herbs according to the recipe in hand.
Tips

If you don’t have access to fresh fenugreek, use the dry one.

Frying time will vary depending on the amount of the herbs you are frying.
