Ingredients
Directions
  • Prepare meat, eggplant, fried onion, mint, garlic and meat topping using the related videos.
  • Clean and wash lintel.
  • Cook lintels in a pot with 2 cups of water and salt for 30 minutes.
  • Mash cooked lintels with a fork or food processor.
  • Mash cooked meat with a fork or food processor.
  • Cut fried eggplants to small pieces and place it in a big pot.
  • Add 2 tablespoons fried onion, 1 tablespoon fried garlic, cover and cook for 15 minutes.
  • Now add meat and lintels to the eggplant, dried whey then cook for 15 more minutes stirring occasionally.
  • If you r using dried whey don’t add salt until you teats it. 
  • Decorate with fried onion, mint, garlic, meat topping, saffron and dried whey (kashk).
  • We usually serve this dish hot with bread. 
  • Now enjoy (nooshe jan). 
Tips

You can always prepare the fried onion, mint, garlic, meat topping, saffron and dried whey a few days ahead.

Instead of dried whey, you can mix 1 cup sour cream, 1 cup yoghurt, 1 teaspoon salt and 4 tablespoons of lemon juice and 2 teaspoons salt.
