Ingredients

3-4 servings

Directions
  • Wash and skin eggplants.
  • Cut eggplants into small pieces.
  • Place eggplants into a strainer, sprinkle with salt and leave aside for 30 minutes.
  • Now rinse the eggplants with water and place them in a pot or frying pan.
  • Add water and fried onion and cook on medium heat while stirring occasionally until the eggplants are soft.
  • Add fresh garlic, pepper and mix.
  • Now add dried whey or mixture of yoghurt and sour cream with lemon juice and mix well.
  • Add 1 tablespoon fried mint and fried garlic and mix well.
  • Now transfer the food to a serving dish and decorate with fried mint, fried garlic, dried whey and meat topping (refer to the related video).
  • Serve this food hot or cold with bread.
  • Enjoy (nooshe jan). 
Tips

You can use frozen eggplant to make this food.
