Ingredients

3-4 servings

  • 6 long eggplants or 3  medium eggplant
  • 6 chicken drams
  • 2 teaspoons salt
  • 1 teaspoon turmeric
  • 2 teaspoons cinnamon
  • 3 soup spoons tomato paste
  • 1/2 cup dried onion or 1 medium fresh onion
  • 4 tablespoons oil
  • 500g chicken breast
  • 1/2 teaspoon black pepper
  • 1-2 cups water
  • 3 tablespoons dry lemon powder (garde lemoo)(refer to the related video
Directions
  • Wash, skin and fry eggplants (refer to the related video)
  • In a frying pan, Heat oil, add dried onion and fry for a few seconds until changes the color.
  • Add turmeric and fry until its brown (refer to the related video).
  • Add tomato paste and fry for a minute.
  • Arrange chicken drams in the pan and add water on top.
  • Add 1 teaspoon salt and cinnamon. Bring to boil, cover and simmer for 30 minutes or until chicken is cooked.
  • Arrange eggplants on top, sprinkle with 1 tablespoon dry lemon and 1 teaspoon cinemon.
  • Now cook for another15 more minutes on the low heat.
  • Serve this stew with rice (Kateh or chelo)
  • Now enjoy (Nooshe jan) 
Tips

Always taste the food at the end and adjust the salt and spices to your taste.
