Ingredients

6 servings

  • 1 cup walnuts
  • 4 cups water
  • 2 tablespoons fried onion (refer to the related video
  • 1/2 cup cooked mashed pumpkin or carrots
  • 250g minced beef for meatballs (refer to the related video
  • 1 medium onion
  • 1 teaspoon salt
  • 1 teaspoon turmeric
  • 2-3 tablespoons sugar
  • 3-5 tablespoons vinegar (any type)
  • 2 tablespoons pomegranate molasses 
Directions
  • Mince, ground or blend walnuts using a blender with a cup of water.
  • Wash skin and blend carrot or pumpkin using a little water.
  • In a pot add blended walnuts, carrot, fried onion, salt and water then bring to boil without covering.
  • Now cover the pot and let simmer on a lower heat.
  • After an hour add pomegranate’s molasses.
  • Prepare your meatballs (refer to the related video) 
  • At this stage after 2 hours the mixture is changing color. Add meatballs and sugar and cook for another hour.
  • This will be a sweet and sour stew and the color will be dark brown.
  • We serve this khoresht or stew with steamed rice (kateh or chelo).
  • Now enjoy (nooshe jan). 
Tips

You can make this stew in a slow cooker too but you need less water.

You can use more sugar and vinegar instead of pomegranate’s males.
