How to make Persian Beef & Okra Stew

Ingredients

4 servings

  • 150g fresh or frozen okra
  • 2 tablespoons unsweetened tomato paste (how to make tomato paste)
  • 2 tablespoons fried onion (how to make fried onion)
  • 200g lamb or beef
  • 2 cups water or beef stock
  • 1/2 teaspoon cinnamon
  • 1 teaspoon salt
  • 3 tablespoons oil
  • 2 tablespoons lemon juice
Directions
  • First, braise the meat (how to braise meat).
  • Clean and wash okra.
  • In a pot, mix tomato paste, fried onion, oil and sauté for a minute to obtain good color and taste from the tomato paste.
  • Add okra and brown for 5 minutes, then add braised meat.
  • Add enough water or beef stock to cover everything.
  • Add salt and cinnamon, cover and bring to boil.
  • Turn the temperature down, simmer and let cook for about 45 minutes.
  • Now add lemon juice and cook for another 15 minutes.
  • Make sure to not stir or overcook the stew to avoid the okra becoming slimy and losing  shape.
  • Serve this stew with steamed rice (Chelo or Kateh).
  • Now enjoy (Nooshe Jan).
