Ingredients

6 servings

Directions
  • Wash and fry celery (refer to the related video)
  • Place fried onion into a medium sized pot, add meat and fry for 5 minutes.
  • Add water, salt, fried herbs and fried celery. Cover and bring to boil.
  • Simmer gently on a lower heat until meat is cooked.
  • Now add verjuice or lemon juice and cook for 5 minutes.
  • Mix flour with 2 tablespoons water to make a smooth paste and add to the stew. Gently mix and cook for another 2 minutes.
  • Cooking time will be 4 hours.
  • Cooking time will vary depending on the type of meat you use.
  • Serve this stew with rice (to make rice, refer to the Kateh or Chelo videos from the basics section).
  • Nooshe jan (enjoy). 
Tips

If you want to cook this stew (khoresht) faster, use a meat that cooks faster, like lamb.
