Ingredients

4-6 servings

  • 300g minced / ground meat
  • 300g fresh dill or 1 cup dried dill tips
  • 150g broad beans /lima beans (peeled)
  • 2 eggs
  • Water
  • 3 tablespoons fried onion (refer to the related video
  • 80g rice(1/2 cup)
  • 2 tablespoon black pepper
  • 2-3 teaspoons salt 
Directions
  • Make drained rice (refer to the related video
  • To make kofteh sauce, in a pot, add fried onion (pyaz dagh) and water.
  • Add 2 teaspoons salt and 1 teaspoon pepper then bring to boil.
  • In a big bowl add eggs, broad beans, rice, meat, herbs, 1 teaspoon salt, 1 teaspoon pepper and turmeric, then mix well.
  • Take a handful of this mixture, shape into a ball and drop slowly into the boiling sauce, make sure that that the sauce is boiling.
  • Make sure the water covers the meatballs to ensure they cook evenly.
  • You can add a bit more water if you like to use as a soup.
  • Cooking time will be around one hour.
  • We serve this food warm with flat bread.
  • Now enjoy (nooshe jan) 
Tips

When you make this (meatball) koofteh you need to have a big enough pot to have all meatballs on one level.

If you don’t have a big pot use two pots.

You can  serve this food hot or cold.
