Ingredients

4 servings

  • 3-4 tablespoons oil for frying
  • 2 big eggplants
  • 2 eggs
  • 1 tablespoon flour
  • 1 teaspoon salt
  • 1/2 teaspoon turmeric
  • 1 teaspoon saffron( how to prepare saffron )   
  • 1/2 teaspoon black pepper 
Directions
  • Fry eggplants (how to fry eggplant). 
  • Place fried eggplants in a pot and mash.
  • Add flour, salt, black pepper, turmeric and saffron.
  • Now break the eggs, add to the mixture and mix well.
  • Heat some oil in a frying pan and pour the mixture in.
  • Flatten the surface, cover and allow the eggs to set.
  • When one side is brown, cut across into 6 pieces and turn over.
  • Brown the other side.
  • Lay on a paper towel to remove excess oil.
  • Serve this frittata with bread or rice ( kateh or chelo ). 
  • Enjoy (Nooshe Jan)
Tips

Let eggplants to cool off before adding eggs.
