Ingredients

4 servings

  • 4 large zucchini (courgettes) or marrows
  • 4-5 tablespoons oil
  • 3 eggs
  • 2 teaspoons liquid saffron (how to prepare saffron)     
  • 1 teaspoon salt
  • 1/4 cup plain flour
  • 1 chopped garlic clove

  

Directions

 

  • Wash and fry zucchinis (How to fry zucchini).
  • Let cool, then place in a bowl and mash zucchinis.
  • Add flour and mix.
  • Add salt, eggs, garlic, liquid saffron and beat with a spoon.
  • Heat oil in a frying pan and pour in the mixture. Flatten the surface, cover and cook on a medium low heat.
  • After 10 minutes, when one side is brown slice the frittata into 8 diagonal sections.
  • Turn the slices over, cover and cook for a few more minutes.
  • Lay slices on a paper towel to remove excess oil.
  • Serve this food with bread or steamed rice (Kateh or Chelo).
  • Now enjoy (nooshe Jan).
Tips

You must add the eggs to the mixture when the(courgettes) have cooled.
