How to make Chive Frittata ( koukou Tareh)
Ingredients
  • 200g chives
  • 2 eggs
  • 1/2 teaspoon salt
  • 2 garlic cloves
  • 2 tablespoons flour
  • 1/2 teaspoon turmeric
  • 1/4 cup oil (3 tablespoons)
Directions
  • Clean, chop, wash and drain chives.
  • Wash, skin and finely chop garlic.
  • Place all the ingredients in a bowl. Break and add eggs.
  • Mix well to combine.
  • Heat oil in a frying pan and pour the mixture in.
  • Flatten the mixture, cover and allow the eggs to set.
  • When one side is brown, cut across into 6 pieces and turn over and brown.
  • Lay the frittata pieces on a paper towel to remove excess oil.
  • Serve this frittata with bread and sabzi khordan, nan barbary, nan taftoon or with steamed rice (kateh or chelo).
  • Enjoy (nooshe jan).
