Ingredients

6 servings

  • 4 tablespoons oil
  • 1/2 cup fried onion(how to make fried onion)
  • 1 heaped tablespoon Mediterranean tomato paste (how to make  homemade tomato paste)
  • 1 teaspoon turmeric
  • 250g minced beef
  • 1/2 cup dried parsley, or chopped fresh parsley
  • 3 teaspoons dried or fresh rosemary, mint and tarragon
  • 1/2 cup china dual (yellow spelt peas)
  • 1 cup uncooked rice
  • 2 tablespoons salt
Directions
  • Clean, wash and cook lapeh (china dual / yellow spelt peas).
  • In a pot add water and lapeh and cook for 10 minutes.
  • Soak dried herbs around one or 2 hours and then drain.
  • Clean, wash rice and cook for 10 minutes, then drain.
  • You can cook rice and lapeh together.
  • In a pot add oil, fried onion, meat and brown it for 5 minutes.
  • Add salt, pepper, turmeric, tomato paste and brown for a few more minutes.
  • Now add Lapeh (china dual), herbs.
  • Add this mixture to the rice and mix well.
  • Now use this mixture according to the recipe in hand.
  • Now enjoy (Nooshe jan)
Tips

yellow split peas and rice should be just half cooked.

You can prepare this stuffing a day ahead and keep it in the fridge.

Always record the date on the container of the food when storing in the freezer.
