How to make Carrot Jam (morabba haveeje)
Ingredients
  • 1/2 kg yellow carrots or normal carrots
  • 1/2 kg sugar
  • Juice of one lemon
  • 100g orange peel or any other peel from the citrus family
  • 1-2 teaspoons gelatin powder or gelatin sheet
  • 1 cup water 
Directions
  • Wash and peel carrots.
  • Grate carrots using the bigger holes of the grater. Grate from top to bottom in a bowl of water then drain.
  • Cut orange peels into strips and place them in a small pot. Add water and boil for at least 3 minutes.
  • Drain and repeat 2 more times then drain again.
  • In a big pot, add carrots, orange peels, sugar, water and bring to boil. Let simmer gently for 2 hours.
  • Dissolve gelatin in hot water and add to the jam.
  • Add lemon juice and cook for 5 more minutes.
  • Now enjoy (nooshe jan). 
Tips

We add lemon juice to the jam to prevent crystallization later on.
