How to make Fig Jam (Morabbaeh Anjeer)
Ingredients
  • 500g fresh figs
  • 500g sugar
  • 1-2 tablespoons lemon juice
  • 1/2 cup water 
Directions
  • Clean and wash figs.
  • Prick each fig a few times with a toothpick, this will allow the syrup to get into the figs when cooking and still allow them to hold their shape.
  • Cover with sugar and leave aside overnight.
  • Transfer them to a big pot and slowly cook them on medium heat until they change color.
  • When figs are cooked, pour a few tablespoons of the syrup into a small bowl and let cool to see if it's thick enough.
  • Add lemon juice and cook for few more minutes.
  • Transfer the jam to a jar when it's still hot and cover with a tight lid.
  • Now enjoy (nooshe jan). 
Tips

We add lemon juice to prevent crystallization.
