Ingredients

1 serving

  • 300-500g spinach
  • 3-4 tablespoons oil
  • 1 medium chopped onion
  • 1 teaspoon turmeric  
  • 1/4 teaspoon salt
  • 1-2 eggs
  • 1 teaspoon butter 
Directions
  • Clean and wash spinach.
  • In a frying pan, fry onion with oil.
  • Add turmeric and fry for a few seconds.
  • Add chopped spinach and fry for at least 5 minutes. Add 2 to 3 tablespoons water and fry for a further 3 minutes.
  • Make a circle with the spinach, leaving an open area in the middle of the frying pan.
  • Break 1 to 2 eggs in the middle and allow the egg whites to set.
  • Serve this food with bread.
  • Enjoy (nooshe jan). 
Tips

Don't fry the spinach for too long as it'll lower the quality of the taste.
