How to make Sausage and Potato Omelette
Ingredients

2 servings

  • 3 medium potatoes
  • 4 eggs
  • 2 medium sausages of your choice
  • 4 tablespoons tomato paste
  • 1/2 teaspoon salt and pepper
  • 1/2 cup oil
Directions
  • Wash, peel and dice potatoes.
  • Wash diced potatoes, drain and dry with a clean kitchen towel.
  • Heat oil in a non-stick frying pan, add potatoes and fry without stirring until they change colour.
  • Add salt and pepper, mix and fry until all the potatoes are brown.
  • Add tomato paste and fry for 1 minute.
  • Thinly slice the sausages and fry in another pan for 2 minutes, then add to the potatoes and mix.
  • Break the eggs on top, cover and cook till eggs are set.
  • Serve hot with bread.
  • You can serve this omelette for breakfast, light lunch or light dinner.
  • Enjoy.
