How to make Pottage Herbs (Sabzi Ash)
Ingredients
  • 1/2 kg mixture of fresh coriander, parsley, spinach, chives and dill
  • 3-4 garlic cloves 
Directions
  • First, clean the herbs.
  • Wash the herbs together except for the chives.
  • To wash the herbs, soak them for 30 minutes in a sink or a big pot.
  • Drain the herbs with a strainer.
  • Soak again in water for a few seconds and drain again.
  • Cut the chives separately.
  • Wash and drain the chives.
  • To dry the herbs, place them into a clean cloth bag, close the top, place in the washing machine and spin a few times.
  • Now chop the herbs.
  • Skin and chop the garlic and add to the herbs.
  • Now use the herbs according to the recipe in hand. 
Tips

If you don’t have access to fresh herbs, you can use dried herbs.

You can prepare and keep these herbs in an airtight container in the freezer for up to 3 months.

Always record the date on the container of food when storing in the freezer.
