Mayonnaise

Ingredients

6-7 servings

  • 5-6 large potatoes
  • 5 eggs
  • 6-7 small carrots or 2 big carrots
  • 10 gherkins, Mediterranean style or any unsweetened gherkins (1 cup)
  • 2 cups chopped, cooked, chicken
  • 3 teaspoons salt (add more if you need)
  • 1 cup mayonnaise
  • 2 tablespoons lemon juice 
  • 1 cup peas
  • Salt to your taste (around 2-3 teaspoons)
Directions
  • In a pot, place potatoes, carrots, eggs, one cup water and bring to boil. Then cover and cook slowly on a medium heat.
  • When cooked, pour in cold water and let cool.
  • Skin and chop potatoes and carrots.
  • Combine all the ingredients in a big bowl and mix well (use hand) to bind together (2-3 minutes).
  • Add more salt or lemon juice to suit your taste.
  • Now enjoy (nooshe jan). 
Tips

If you'd like to use less mayonnaise, you can use half a cup of thick yoghurt with half a cup of mayonnaise

You can use cooked beef or lamb tongue instead of chicken.
