Ingredients

2-3 servings

  • 2 cups rice
  • 3 tablespoons salt
  • 1-2 whole fresh beetroot
  • 1 teaspoon liquid saffron (refer to related video). 
  • 3 tablespoons water
  • 4 tablespoons oil 
Directions
  • Prepear the drained rice(refer to related video).
  • Wash, skin and slice beetroot into 1 cm thick pieces.
  • In a pot, add water, oil, liquid saffron and arrange the beetroot slices.
  • Arrange the rice on top of the beetroot, then bring all the rice to the centre.
  • Make a few holes on the rice pile, cover and allow the rice to steam.
  • Cover the lid with a kitchen towel, cover the pot and cook the rice for 1 hour on a lower heat.
  • When ready, place a serving dish on top of the pot, turn the pot over with the dish to transfer the rice over to the dish.
  • Serve hot.
  • Now enjoy (nooshe jan). 
Tips

If you want to get a good tadig, you have to cook the rice longer using a low heat.
