How to make Chicken & Eggplant Rice Cake
Ingredients
  • 200g boneless chicken
  • 1 teaspoon salt 1 small onion
  • 2 garlic cloves
  • 1/2 c water to cook chicken
  • 1 1/2 cup basmati rice
  • 2 tablespoons salt to cook rice
  • 6 cup water to cook rice
  • 1 cup yoghurt (how to make homemade yoghurt)
  • 1 extra teaspoon salt
  • 2 eggs
  • 2 fried eggplant (how to fry eggplant)
  • 2 teaspoons liquid saffron (how to make liquid saffron)
  • 1/2 cup oil
Directions
  • Combine chicken, onion, salt, garlic and half cup water in a pot and cook for 30 minutes (how to cook chicken) then Sheered the chicken.
  • Cook the rice and drain (how to make drained rice).
  • In a big bowl combine cold rice, eggs, 1 teaspoon salt, yoghurt and liquid saffron then mix.
  • Heath the oil in an oven proof pot, cover the bottom of the pot with 1/3 of the rice mixture, arrange eggplant on top with half of the reaming rice mixture.
  • Arrange cooked chicken on the rice and cover the chicken with the reaming rice mixture. Cover the pot and cook on medium heat for 10 minute, then for 1 H on lower heat or until rice forming crust on the sides.
  • Then place the rice with pot under the grill and cook on 200C until u get the golden crust on top.
  • Serve this rice hot or cold with salad.
  • Enjoy (nooshe jan).
Tips

Take the time to read recipes through before you begin.

Cooking Tips
To make yoghurt drink (Dough) use sour yoghurt. To make sour yoghurt, keep yoghurt out of fridge overnight.
To have a spreadable butter for your sandwiches, keep the butter in room temperature for 1 Hour, or place it in the microwave oven for 15 to 20 seconds. Times vary depending on the amount of butter you need.
