How to make Cucumber Pickles (Torshi Khiyar)

Ingredients
  • 2 garlic cloves
  • Vinegar to fill the jar
  • 2 tablespoons salt
  • Cucumber (depending on the jar size)
  • 1 tablespoon dried tarragon
  • Small plastic bag 
  • 1 jar
Directions
  • Wash and slice cucumber.     
  • Fill the jar with sliced cucumber.
  • Add vinegar, enough to cover the cucumber.
  • Add salt and garlic.
  • Place herbs in a small plastic bag, seal the bag and place it into the jar.
  • Close the lid and shake the jar a few times.
  • Record the date on the jar.
  • Store the jar in the pantry.
  • It’ll take about 1 week for the pickles to be ready.
  • Serve this pickle with rice dishes and abgoushts.
  • Enjoy (nooshe jan). 
Tips

You can use fresh dill or tarragon instead of dry tarragon.

The amount of ingredients will vary depending on the size of the jar you are using.
