Ingredients
Directions
  • Prepare the syrup 3 hours ahead of making the sweet.
  • In a cup, mix starch, yoghurt, ghee, saffron and make a smooth paste.
  • Add flour, rose water, baking soda and mix again.
  • Transfer the mixture into a plastic sauce bottle and close the lid.
  • Heat oil in a small frying pan.
  • Using the nozzle of the sauce bottle, pour the mixture into the hot oil using a circular motion.
  • Fry the pastry on both sides until golden brown, and then carefully remove from the oil and place on a paper towel to drain.
  • Place the pastries into a deep bowl and pour the syrup on top. Leave aside for at least 5 minutes.
  • Carefully place them onto a serving dish.
  • Serve Zolbia with tea or coffee.
