How to make Persian Lentils Rice (Adas Polo ba keshmesh)

Ingredients

3-4 servings

  • 1/2 cup brown lentils
  • 1 cup basmati rice
  • 2 tablespoons butter
  • 5 tablespoons oil
  • 2-3 tablespoons salt
  • 1 teaspoon cinnamon
  • A few pitted dates
  • 1/4 cup raisins
  • 1/4 cup dried onion
  • 1/2 teaspoon turmeric
Directions
  • In a pot, wash lentils, add salt, 3 cups water and cook until tender (5-10 minutes).
  • Wash rice and add to pot. Add oil and 1 cup water.
  • Bring to boil and cook until all water evaporates.
  • Gather rice to the centre of the pot and make a few holes on the surface to allow steam to escape.
  • Add butter on top.
  • Cover the lid with a paper towel or kitchen towel and place on pot.
  • Cook for a further 20 to 30 minutes on low heat.
  • In a sauce pan, brown onions, add turmeric, raisins and dates and fry for 1 minute.
  • On a serving dish, arrange rice and add date mixture on top.
  • Now nooshe jan (enjoy).
Tips

Serve this food with yoghurt and pickles like eggplant pickles.
