Ingredients

4-6 servings

  • 2 cups basmati rice
  • 1 cup yellow broad beans
  • 1/4 cup oil
  • 1/2 cup dried onion or 1 medium onion chopped
  • 2 tablespoons turmeric
  • 4 cups water
  • 3 teaspoons salt
  • 2 tablespoons butter
  • 2 tablespoons clarified butter (refer to the related video 
Directions
  • In a pot, pour oil, add dried onion and fry for around 30 seconds or until onion changes color.
  • Add turmeric and stir for a few seconds.
  • Add 3 tablespoons water and stir for a few more seconds.
  • Now add yellow broad beans.
  • Add 3 cups water, bring to boil, cover and cook for 10 minutes.
  • Add salt, then rice and cook till all liquid evaporates.
  • Add butter on top, cover the lid with a kitchen towel, place on pot and cook for 20 minutes on a lower heat.
  • If you want to get a good tahdig cook for 30-40 minutes.
  • transpher cooked rice into the seving dish, Pour clarified butter on top then serve.
  • Now nooshe jan (enjoy). 
Tips

Serve this food with pickles and yoghurt
