Ingredients

2 servings

Directions
  • In a pot, heat oil and add fried onion.
  • Add tomato paste and fry for 1 or 2 minutes.
  • Add meat and brown for 5 minutes.
  • Wash, skin, chop potato and add to meat mixture. brown for a few minutes.
  • Wash rice and add to meat mixture.
  • Add water, salt, cover the pot and let cook.
  • When all the liquid in the pot has evaporated, add fried eggplant and mix.
  • Cover the lid with a kitchen towel, cover pot and cook for 30 minutes on a low heat.
  • Serve this food with yogurt and pickles. Like Instant pickles.
  • Now nooshe jan (enjoy). 
Tips

You can use fresh tomato juice instead of tomato paste and in this case add less water.
