Ingredients

Makes 1 small cake or 1 swiss roll

  • 4 eggs
  • 4 tablespoons sugar
  • 4 tablespoons white flour
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla powder or vanilla essence
  • 1/2 teaspoon baking powder
Directions
  • Separate the egg yolk from the egg white.
  • Preheat oven to 375° F / 190°C.
  • Beat egg yolks with 2 tablespoons sugar until thick and lemon colored.
  • Clean the blades and beat the egg whites(How to beat egg white).
  • Beat the egg whites until thick then gradually beat in the remaining sugar.
  • Beat until stiff peaks form. Fold egg whites intoyolk mixture.
  • Sift flour into a separate container then add to the egg mixture, folding in carefully.
  • Line a 40X30 cm baking tray with baking paper.
  • Pour batter into the tray, place the tray in the middle shelf of the oven and bake for 12 to 15 minutes.
  • Transfer the sponge onto a damp clean kitchen towel.
  • Trim edges if necessary. If making sponge for Swiss roll, roll the cake up with while still warm. Let cool completely.
  • Now use the sponge according to the recipe in hand.     
Tips

You can use a round cake tin to make the sponge with this batter.
